Topinambur

Composition
The chemical composition of topinambour tubers is similar to that of potatoes. They are nutritionally superior to many vegetables and twice as valuable as beet. Topinambour tubers contain up to 3 % of protein, mineral salts, soluble polysaccharide inulin (from 16 to 35%), fructose, microelements, 2-4 % of nitrogenous substances, are rich in vitamin B1 and contain vitamin C and carotene. The content of sugars in tubers increases depending on the timing of harvesting due to the outflow of nutrients from stems and leaves.
Properties
The main properties of the plant:
- provides nutrition to cells, stimulating their renewal, rejuvenation, promotes protein synthesis;
- reduces immunodeficiency, strengthening immunity, increasing the activity of T-lymphocytes in the blood;
- protects against the formation of atherosclerotic plaques;
- provides stable blood pressure, relieving spasms and dilating blood vessels;
protects against heart disease, normalizing heart rate and elasticity of vascular walls;
- improves the condition of hair and nails, thanks to easily digestible silicon;
- Prevents diabetes by reducing the need for insulin.

Use
Prevention of dysbiotic conditions, food allergic reactions, indigestion, hyperglycemia, hypercholesterolemia, reduction of the body's defenses, inflammatory bowel processes, lack of B vitamins.
The use of Jerusalem artichoke concentrate in the complex treatment of patients with type II diabetes mellitus for 3 weeks contributed to:
- decrease in basal glycemia;
- reduction of food glycemia;
- improving the dynamics of lipid metabolism (cholesterol, triglycerides);
- improving the provision of patients with ascorbic acid.
Jerusalem artichoke tubers are consumed raw, dried and boiled an hour before meals for diabetes, pancreatitis, stomach ulcers, urolithiasis, hypertension, polyarthritis, obesity, and also as a mild laxative.
